Ingredients

Onigirazu can be prepared with any filling of your choice. Here are some of the common ingredients for making the snack:

  • Short-grain rice
  • Nori sheets
  • Spam
  • Eggs
  • Kimchi
  • Sugar
  • Sesame oil
  • Lettuce
  • Japanese mayonnaise

Preparation

To make an onigirazu, all you’ll need to do is combine cooked ingredients with rice and seaweed.

1. Cut the Spam vertically in large rectangular shapes.

2. Pan fry the Spam until golden brown and crispy.

3. Crack two eggs in a well-oiled non-stick pan and break the yolks to create a thin marbled omelet.

4. Pan-fry the bokkeum kimchi with sugar and sesame oil until the kimchi starts to caramelize.

Assembly

Once you’ve cooked the ingredients, it’s time to assemble your onigirazu by following the steps below:

1. Place a layer of cling film on the surface. Put the nori in a diamond shape.

2. Put ½ cup of rice in the center of the nori. Make a square shape in the center of the nori diamond.

3. Squeeze 2 tsp of mayonnaise. Then place the perilla leaves, spam, eggs and kimchi. Top off with ½ cup rice.

4. Fold the ends of the nori like an envelope. Wrap tightly with cling film so that the onigirazu can hold its shape.
